I have always been a fan of 5970...

and I had it 3 times before and every single time we part ways amicably
Why? I LOVE the look of 5970G because of the steel gray dial but it's hard for me to like the movement. The size of 5970 is also damn perfect.
Overall, 5270 is a better watch technically but it lacks soul. It doesn't talk to me.
If I didn't mistaken what you said, your 5970/salmon dial is basically the price between a 5004P and a 5078P. It is a beautiful dial and I would believe it might have come across your mind that they will
use such color dial for 5270, no? It will make commercial sense for them but yours is still extremely rare.
So we have to think a bit further. What makes your 5970 more 'sought after' than the others? The only answer I can think of is the beautiful color dial and the bragging rights. The lucky few thought it is worth the money for these two main reasons. Now that we have the new 5270P, the bragging right is lesser but its rarity and the dial are still there. So there's nothing to be concerned about.
Which watch I like better?
Size wise, I prefer the 5970. Dial wise, I prefer the 5270P because of the black chrono hand and the numerals index.
Will I buy either watch? I will consider 5270 P because of the platinum, the dial and the movement, and that's IF the size doesn't overwhelm my wrist when I try it. They tend to wear smaller due to the case.
And will these 5270P affect the future pricing of 5970 salmon dial, yes. How do I know ? An authorised dealer was already calling me if I am interested to buy his 5970 salmon dial which he said he will never sell it even if I paid him $500k a few months ago. He wanted to keep it for the next generation. Does it matter? No. In the long run, I am sure you will recoup whatever you paid, through many years of enjoyment and the bragging rights to hold on to something very rare.
In short, your watch should still make you smile when you look at it.
